CHARRED PLUMS WITH GOAT CHEESE

A cook's hands crumble goat cheese onto charred plums at the Featherbed Inn

Charred Plums with Goat Cheese

Serves 4

Ingredients

​

  • 4 small or 2 large plums, not too ripe

  • 1 tablespoon unsalted butter

  • Goat cheese

  • Olive oil

  • Freshly ground black pepper

 

Directions

  • Cut the plums in half across the equator and pull out the pits. Sometimes these can be tough to pull out, and we’ve got a handy pliers we use just for that purpose.

  • Melt the butter in a cast iron pan. When it’s good and hot, add the plums. Leave them be for a couple minutes, then slide them around so they don’t stick. Cook until you’ve got a nice char on the cut side and the plums have softened a bit.

  • Transfer the plums to little dishes. Crumble some goat cheese over the plums, drizzle with a little olive oil, and sprinkle with black pepper.
