About the Recipe
This quick and easy sauce uses juice and jam and makes an excellent topping for pancakes or anything else your heart desires.

Ingredients
1/8 cup sugar
1 cup orange juice
½ cup apricot jam
¾ inch (give or take) of fresh ginger, well grated (about a teaspoon grated)
Preparation
Mix sugar and orange juice in a small saucepan and bring to a slow boil, mixing until the sugar is melted. Add the apricot jam and grated ginger. Simmer until slightly thickened and the jam is all melted.
Serve with puffed pancakes, or anything else that would benefit from a bit of orange-apricot-ginger love.
