About the Recipe

A sweet, cheesy, caramelized pear recipe.

Ingredients

  • 4 oz of your favorite blue cheese or goat cheese (or if have neither, like me yesterday, use a mix of feta/yogurt)

  • 2 tablespoons honey

  • ¼ teaspoon salt

  • ½ teaspoon black pepper

  • 2 firm Bosc or Bartlett pears

  • 3 tablespoons butter

  • 3 tablespoons Madeira

  • 2 tablespoons raw sugar

  • 3 tablespoons slightly crushed walnuts

  • 2 tablespoons cranberries

  • 1 tablespoon raisins

Preparation

Mix cheese, honey, salt, and pepper in a little food processor until smooth.

Cut each pear in half, then cut each half into three sections.

Melt butter in a large sauté pan (cast iron works great) over medium heat. Add pears and sauté until lightly caramelized; they should be nicely golden and somewhat soft.

Put a lump of the cheese/honey into each of four bowls. Arrange pear slices artfully around or on top of the cheese.

Add the Madeira, raw sugar, nuts, fruit, and salt to the butter, and cook for a few minutes until the Madeira caramelizes and the sauce thickens slightly. Drizzle your lovely sauce over the pears.
