CARAMELIZED PEARS WITH MADEIRA SAUCE

Three red pears

Caramelized Pears with Madeira Sauce

Serves 4 or more, depending on how many slices you use per dish

Ingredients

  • 4 oz of your favorite blue cheese or goat cheese (or if have neither, like me yesterday, use a mix of feta/yogurt)

  • 2 tablespoons honey

  • ¼ teaspoon salt

  • ½ teaspoon black pepper

  • 2 firm Bosc or Bartlett pears

  • 3 tablespoons butter

  • 3 tablespoons Madeira

  • 2 tablespoons raw sugar

  • 3 tablespoons slightly crushed walnuts

  • 2 tablespoons cranberries

  • 1 tablespoon raisins

Directions

  • Mix cheese, honey, salt, and pepper in a little food processor until smooth.

  • Cut each pear in half, then cut each half into three sections.

  • Melt butter in a large sauté pan (cast iron works great) over medium heat. Add pears and sauté until lightly caramelized; they should be nicely golden and somewhat soft.

  • Put a lump of the cheese/honey into each of four bowls. Arrange pear slices artfully around or on top of the cheese.

  • Add the Madeira, raw sugar, nuts, fruit, and salt to the butter, and cook for a few minutes until the Madeira caramelizes and the sauce thickens slightly. Drizzle your lovely sauce over the pears.
